Keto “French” Fries and ketchup

The thought of keto French fries brings to mind a list of soggy replacements that are not only a paint to make, but yield a less-than-tasty outcome. I have tried everything from zucchini to breaded root veggies, but I am here to tell you that this is our absolute favorite keto French fry. “Coconut flour”, you ask, “Doesn’t that taste like a bread stick?” Not really. I think it is too dense, as there is no leavening. The texture is really closer to French fry than it is to bread stick. I tell them we are having these fries, and I get “horray”. I promise, once you get the hang of making them…you will rate them above all of the other root veggie tricks you have tried.

French Fries

  • 1 1/2 cup sifted coconut flour
  • 3 tsp xantham gum
  • salt to taste
  • warm water slowly added until you have a dough

Mix the coconut flour, xantham gum and salt completely. Slowly add a little water at a time while mixing until you reach a dough you can work with. Not too much water, or it will be sticky and wet. You will then roll the dough out to a rectangle the thickness of French fries that you prefer. As the oil preheats, cut the fry shapes and carefully fry them in hot oil. I prefer coconut, lard, or duck fat.

Fry them to a golden brown. You want them crunchy enough, and not too delicate….but also not too hard. you will see in the video how I mold the dough into a rectangular shape before cutting it with a dough scraper.

Ketchup

  • Quality Tomato paste
  • Coconut Aminos
  • mustard
  • salt
  • stevia / monk fruit
  • lemon / vinegar
  • curry / garam masala / pie spice *optional
