When working our way back to health, the first topic to always creep into the discussion is what we shove in our face. Eat less, eat more fat, eat fewer carbs, fast, juice, pastured….back in the 1980’s I even remember a model telling me she was on a diet where she only ate white food. Everyone has a theory. I do too, but I will share it as what is working for me and what I have learned. I am by no means an expert in any way. I have, however, overcome chronic illness and am on my way back to perfect health. I truly believe that we are, in fact, what we eat.
For me, a pasture based keto style diet works best. I believe it is a much healthier diet for those who have been through illness as it has no mass produced, processed foods and is nutrient dense. We are fully grain free, and I believe it has been key in my recovery. I feel horrible when I eat grains or anything that is high mold/oxalate/carb. That may not be the case for everyone, but it has been for us.
Here is a basic intro into clean keto. I also intermittent fast 16:8. My goal is to do much longer fasts to lose the weight gained during mold illness once my MCAS stabalized. If you are interested in this, Dr Berg is a good resource.
